Yoshikane Left-Handed Deba Knife has a short, thick blade intended for cutting through soft joints, little bones and just thick amounts of product. Deba knives are designed for cutting fish and meat without damaging the flesh. Most of Deba knives are right-side beveled, they aren’t really handy for working with the left hand. Yoshikane Left-Handed Deba Knife will become a good, reliable friend for left-handed users, it’s short and convenient both for professionals and amateurs.

Yoshikane Hamono Seisakusyo was founded in 1919 by Mr. Yoshida Kanekichi in Tsubame city, known as blacksmith center since the 16th century. The 4th generation master, Mr. Yamamoto Kazuomi, the grandson of Mr. Yoshida, is strong-spirited to keep and protect Yoshikane Knives’ reputation and popularity amongst Japanese chefs and professionals from all over the world. Yoshikane Knives are fully handmade from the best sorts of steel in different techniques and styles. Yoshikane Hamono Seisakusyo proudly keeps open to the public their extremely complicated knife-making process, that consists of more stages than usual one. Each stage, be it hammering the steel right after heating it up to 1050 °С or the first grinding at the wheel with lots and lots of cold water, is a big physical and professional challenge. Yoshikane Knives are made by true experts, their knowledge and experience allow to continue famous Tsubame blacksmith tradition and to satisfy any customer from all over the world.

Yoshikane Left-Handed Deba Knife is made by the traditional Japanese forging technology called hagane-tsuke. Two lists of steel, a soft one and a harder one, are forged together all along the length, it differs from hon-yaki hammering tradition as it doesn’t mix the lists one into another deeply. So, to prevent the lists from departing away from each other and to prevent the blade from bending, the blacksmith should have a lot of knowledge and experience to master this technology. Now you can purchase Yoshikane Left-Handed Deba Knife at best price with direct shipping from Japan in our store.
