Premium Tojiro Pro Gyuto Hocho was designed to satisfy the needs of the strictest Japanese cuisine chefs. Each of these knives is forged with a hammer by master’s own hand. Tojiro factory is located in Niigata prefecture, former province Tsubame-Sanjo, that used to be a famous Japanese sword producing district for centuries. The technique of making best quality blade was improved through many generations. Now it has transformed to cutlery manufacturing technique that produces superiorly sharp and durable Tojiro knives to be loved and admired by chefs from all over the world.

Premium Tojiro Pro Gyuto Hocho uses multiple layered steel with the hard high carboned steel for the core of the blade and softer steel for the surface. Such technique makes the knife hard and durable but allows it to be sharpened to the perfect condition. The layers of steel are forged together with a hammer in the hands of the professional. An old technique of precise striking with a hammer requires lot of knowledge and experience to make each stroke work for the quality of the blade. This leads to a very special pattern on the blade, that is called “caramel tree pattern” in Japanese language. Look how those “caramel tree” patterns are close to each other but do not interfere, that’s an evidence of the master’s hand. Each knife’s pattern is unique and cannot be repeated exactly the same way because each knife is made by hands only with the old Japanese sword-making technologies, no machinery is ever used for Premium Tojiro Pro Gyuto Hocho.
