Iseya Damascus Steel Nakiri Knife is hand-made with hammer from 33 layers of steel by the traditional Japanese technology of sword blades’ making. You can see the difference in the pattern, the upper side proudly demonstrates the hammer’s traces, each one is close to another but does not interfere. Only experienced professional achieves this beautiful blade-making technique. The lower side of the blade is polished seamlessly to cut through the vegetables in one stroke. Nakiri knives are designed especially for cutting vegetables, the word “nakiri” literally means “cutting vegetables”. Thin blade and the cutting edge going for full-cut at once allows to make beautiful cut even on delicate vegetables.

Iseya Damascus Steel Nakiri Knife features the blade with the core made from VG-10 steel, a golden standard of high-carbon stainless steel in Japan. It is enriched with molybdenum, vanadium and cobalt to make the steel superior hard and durable. That’s why Iseya Damascus Steel Nakiri Knife is so exceptionally sharp and needs to be re-sharpen less frequently than other professional chef knives. By the way, to sharpen this knife is easier than usual due to the softer sorts of the steel that cover the surface of the blade.
