Kato Uchihamono Damascus Nakiri Knife is a knife for cutting big amounts of vegetables. Thin blade and the cutting edge going for full-cut at once allows to make beautiful cut even on delicate vegetables and prevents the cuts from sticking together by the tiny threads. Where is Kato Uchihamono Damascus Nakiri Knife made?

Kato Uchihamono Knives are fully handmade in Echizen city, pref. Fukui. Echizen (also named Takefu at 1948-2005) has been famous for more than 700 years as a sword-making center. The blades called “Echizen Uchi-Hamono” (Echizen hammer-forged blades) were highly valued amongst Samurai warlords. The history of Kato Knife Manufacturing Inc. (previous name Kanehiro Hamono) started in 1928, when the current grandmaster’s ancestor started learning the art of making blades in Echizen. Four generations of Kato masters, their apprentices and colleagues are using traditional Echizen technologies for making best kitchen knives.

What makes Kato Uchihamono Damascus Nakiri Knife so special?

There are multiple reasons to choose Kato Uchihamono Damascus Nakiri Knife.

  • The combination of Aogami Super carbon steel at the core and the tip and stainless steel at the surface allowed to reach the HRC hardness of 64, making the knife hard and durable.
  • The blade is made by the traditional technique called “Nimai Hiroge”, was born in Echizen city. The master has to heat in the fire pit two blades in the same time. After this, the master thins out with the hammer both blades. This quite difficult method allows the blades to cool down slower than if made one-by-one. That’s why the blades made by Nimai Hiroge technique do not require the second heating up in the fire pit, and the carbon percentage of the carbon steel does not decrease.
  • The blade is easy to resharpen and quite resistible to rust. However, we recommend to clean and to wipe the knife until dry after each use to make sure it will serve you for a long time.
  • The thickness of the blade is only 1.8 mm, with the thickness of the tip of less than 1 mm, making the knife lightweight and convenient even for heavy use.
  • The Damascus pattern is unique for each blade and cannot be repeated exactly.
