Masamoto Sashimi Knife was born at the requests of Japanese cuisine’s chefs. Its lnarrow blade slices boneless fish fillets into sashimi and toppings for sushi in one long stroke.
 
Masamoto Sohonten was founded more than 150 years ago. The founder, Minosuke Matsuzawa, was the first maker in Kanto region (modern Tokyo) to produce Honyaki kitchen knives, the blades that were made by the same technologies that Samurai swords. Six generations of masters have been passing the secrets of blade making to each other. Masamoto knives are loved by the chefs all over the world for their sharpness, durability and easy maintenance.
 
Masamoto Sashimi Knife is forged from white carbon steel #2 and a special Japanese type of steel called Tamahagane. White steel has a pure carbon content without any inclusions, this allows cutting edge to become very sharp. Tamahagane steel is made from the iron sand. While factory-made sorts of steel have the same structure and carbon percent all through the piece, handmade Tamahagane steel's uneven structure allows it to absorb the impulse better. That's why Tamahagane has been used for centuries for forging samurai's swords. However, very few blades nowadays use this technology due to its higher cost and the lack of the experienced craftsmen.
