Fire-forged Rosewood Damascus Steel Nakiri Knife is made by this amazing traditional technique from Aogami steel, Blue Paper Hitachi high carbon steel produced by Hitachi Metals. This steel is made is made by adding chromium and tungsten to refined carbon steel. Aogami steel has highest wear resistance and lowest toughness, hence Blue Paper steel knives are especially sharp and durable.

Nakiri knife is designed especially for cutting vegetables without sticking together by tiny threads. Thin blade and the cutting edge going for full-cut at once allows to make beautiful cut even on delicate vegetables.
