Ryusen Damascus Steel Santoku Knife is made from 63 layers of nickel enriched steel with the core made from VG-10 Steel, a golden standard for steel in Japan. The handle is made from strengthen plywood, the knife has a metal bolsters and three big powerful tacks hold the blade on the place, so it won’t slip off occasionally. Damascus pattern is unique for each knife and cannot be repeated exactly, however, Ryusen Damascus Pattern differs drastically from other makers due to very special hammer-forging techniques, just take a look at the blade to see it.
Ryusen Hamono company was founded in 1953 in in Echizen city, pref. Fukui. Echizen (also named Takefu at 1948-2005) has been famous for more than 700 years as a sword-making center. The blades called “Echizen Uchi-Hamono” (Echizen hammer-forged blades) were highly valued amongst Samurai warlords. Ryusen Knives were the first in Japan to be granted the status of Dentouteki Kougeihin, National Traditional Craft Products, a very special status granted by the Ministry of Economy, Trade & Industry of Japan to the most qualified traditional goods. Now three generation of craftsmen have been developing own special processing technique for thermal treatment, blade polishing, press and welding in order to seek new possibilities for blades.
Japanese word “Santoku” literally means “three virtues” or “three uses”. Santoku knife is a Japanese knife designed for three purposes at once: slicing, dicing and mincing, e.g. for vegetables, fish and meat. Ryusen Damascus Steel Santoku Knife is short (173 mm blade), thin and light (182 g), it’s very versatile by form and will serve you for long, long time. The maintenance is easy, rinse it off with the hot water, wipe off with clean towel and let completely dry before storing. Those simple moves will let the knife stay sharp and hard for years and years even with heavy rotating at work. The blade is two-side beveled, so the knife can be used both with right and left hands.
