Takeshi Saji Damascus Aogami Steel Gyuto Knife is made from Aogami Blue Paper Steel, a sort of high-carbon steel enriched with tungsten and chromium. Aogami Blue Paper Steel allows to produce a very sharp cutting edge and it’s more wear-resistant but it demands more complicated heat treatment conditions and more difficult for manufacturing. This means only a high-skilled professional is able to make chef knives from this steel. Those knives tend to be more expensive but they last longer than others, even the good ones, and retain sharp edge longer, so the chef doesn’t need to re-sharpen them frequently.
Takeshi Saji Knives are made in Echizen city, pref. Fukui. Echizen (also named Takefu at 1948-2005) has been famous for more than 700 years as a sword-making center. The blades called “Echizen Uchi-Hamono” (Echizen hammer-forged blades) were highly valued amongst Samurai warlords. Master Takeshi Saji was born in Takefu in 1948 in a family of second-generation smith. During his long career Takeshi Saji has not only trained perfectly in the traditional hammer-forging techniques of Echizen style, he also has developed his own professional secrets, technologies and unique ideas. In 1992, he was granted an honorable certificate of Dentou Kougeishi, “Traditional Master Craftsman”, by the Ministry of Economy, Trade & Industry of Japan.
