Tojiro Santoku Knife is the one you’ve always been looking for to become your most versatile knife forever. Japanese word “Santoku” literally means “three virtues” or “three uses”. Santoku knife is a Japanese knife designed for three purposes at once: slicing, dicing and mincing, e.g. for vegetables, fish and meat. Santoku knives are exceptionally versatile. Tojiro Santoku Knife has a straight edge and a straight dull back that curves towards the edge at the end. It gives the most control, because the dull back edge is made to be held by fingers.

Tojiro Santoku Knife is shorter, lighter, thinner, and more hardened (to compensate for thinness) than a traditional Western chef's knife. It’s excessively well-balanced; blade and handle are designed to work in harmony by matching the blade's width and weight to the weight of the handle.

Tojiro factory is located in Niigata prefecture, former province Tsubame-Sanjo, that used to be a famous Japanese sword producing district for centuries. The technique of making best quality blade was improved through many generations. Now it has transformed to cutlery manufacturing technique that produces superiorly sharp and durable Tojiro knives to be loved and admired by chefs from all over the world. Tojiro Santoku Knife’s blade is made from VG10 steel enriched with cobalt as a core, together with layered high-carbon and low-carbon stainless stell, providing hardness, sharpness and ease to resharpen. The handmade Damascus steel pattern is unique for each blade and cannot be repeated. The blade's edge is curved into the special shape called "Hamaguri blade" or "Clam blade". Hamaguri blade returns back from the cutted pieces easier than the usual blade, allowing not to damage delicate products. As it's symmetrical, this knife can be used for both left and rigth hand. The handle' form is designed to grip it firmly, and three powerful tacks prevent the blade from slipping out.
